BLUEBERRY MOCKTAIL MOJITOS WITH LAVENDER SYRUP

Looking forward to the warmer months? try this non-alcoholic summer mocktail with a blend of fresh blueberries, lime & mint leaves.

Non-Alcoholic | Dairy-Free | Vegan | Vegetarian

INGREDIENTS

  • 1/4 cup fresh blueberries

  • 2 1/2 oz of lavender simple syrup

  • 4-5 of fresh mint leaves + a sprig to serve

  • 3 1/2 oz of club soda

  • 1 oz lime juice

LAVENDER SIMPLE SYRUP

  • 1/2 cup sugar

  • 1/2 cup water

  • 2 teaspoons dried culinary lavender

  • 2 sprigs fresh lavender

    1. ***You can also make this with store-bought simple syrup (instructions below)

STEPS

  • Muddle the fresh blueberries and mint leaves together in a tall glass.

  • Once muddled add ice to the glass, followed by the lavender simple syrup, lime juice, and soda. Stir well.

  • Serve with an additional sprig of mint.

    LAVENDER SIMPLE SYRUP

  • Place the sugar, water, and lavender in a saucepan over medium-low heat. Whisk until the sugar dissolves, bringing the mixture to a simmer. Cook for 1 minute. Turn off the heat and set the saucepan aside. Let it cool completely. Strain the mixture through a fine-mesh sieve to remove the lavender. Store in a sealed container in the fridge!

    ***Alternatively, if you already have store-bought simple syrup, pour the simple syrup into a glass then add lavender. Let the two infuse for at least 30minutes before straining and serving.
